Keto Baked Zucchini Chips Recipe

TOTAL TIME: 30 minutes
SERVES: 6

INGREDIENTS

  • 3 to 4 zucchini, sliced into ¼-inch to ½-inch rounds
  • 3 Tbsp / 45 mL olive oil
  • salt and fresh ground pepper to taste
  • 1½ cups / 355 mL pork rinds, chopped
  • ½ cup / 118.3 mL grated Parmesan cheese
  • 1 tsp / 5 mL dried oregano
  • 1 tsp / 5 mL garlic powder
  • non-fat plain yogurt, optional, for serving

DIRECTIONS:

Preheat oven to 450 degrees F / 232 degrees C.

Line a baking sheet with parchment and set aside.

In a large mixing bowl, combine zucchini slices, olive oil, salt and pepper; mix until combined.

In a separate bowl, combine pork rinds, Parmesan cheese, oregano, and garlic powder.

Setting aside a third of the Parmesan mixture, pour the rest over zucchini slices. Toss to fully coat them.

Place the zucchini slices in a single layer on the baking sheet.

Top with the remaining Parmesan mixture.

Bake for 10 minutes. Rotate pan and continue to bake for 8 to 10 minutes more, or until chips are golden brown. Remove from oven.

Serve with non-fat plain yogurt (optional).
